Mark Poynton at Alimentum restaurant in Cambridge shows us how to make this traditional French potato dish – Pommes Aligot, or as Mark calls it ‘Cheesy Potatoes’.

- 500g of Mint baby potatoes
- 250g double cream
- 250g butter
- 250g grated cheese (Aligot in the recipe but any strong semi hard cheese will work)
